Until three years ago,our experience with BBQ was that of the tyical weekender.  Burgers, steak and ( usually burned)  BBQ or grilled chicken.  Pretty basic stuff. The grill was still a little inconvenient during the summer and usually stored away during the winter. In 2012, all that changed with the purchase of a Brinkman Grill n' Smoke vertical water smoker. ( often, affectionately referred to as an ECB - "El Cheapo Brinkman".)
I don't remember if it was ribs or a pork butt we tried first. I remember watching YouTube videos and reading blogs to learn the tricks of the trade until we felt we understood what we were shooting for.  Still can't recall the cut of meat, but I do remember it was good!  So good we were already planning on the next smoke while we were still eating the first meal - we were HOOKED!
As with most things I get fired up about, I jumped head first into the smoke. The goal became ( and still continues) to master the art of grilling & smoking. 
Three years later and the passion is stronger than ever. We''ve smoked everything from Salmon to beef jerky to cheese and pepperoni, as well as piles of ribs, pulled pork and chicken ( notice I didn't mention Brisket? There's a reason.  I'll get to that in another post). We are certainly still begnners, but we've developed some good recipes and honed our skills and now we're turning our attention to joining the competitive BBQ world. We may not be award winning yet, but let's face it...practice makes perfect AND what could be more fun than hanging out with a bunch of other folks who share your passions for GREAT BBQ??
